Cheese aficionados will be pleased to hear of the collaboration between global hotel chain Hilton and the English Stilton Cheese Makers’ Association; snappily titled Hilton meets Stilton. The collaboration sees the Waldorf Hilton on London’s Aldwych adopting the famous cheese into the courses of their Homage Grand Salon restaurant in a number of inventive and palatable dishes. After our recent visit to the impressive space, where Great Gatsby grandeur meets modern-European cool, we highly recommend diners try the Stilton, Serrano ham and quail egg salad followed by the Cod Fillet with Stilton Crust and Mediterranean style vegetables; the Stilton acting as a rich, luxurious batter on the delicate fish.
The most unexpected partnership came with desert, where a cranberry and walnut pie with Stilton crust left all at the table pleasantly surprised at the balance of sweet, bitter and creamy flavours, all complimented by the glass of Tawny Port that was suggested as an accompaniment by our waiter.
For such a complex cheese it seems a shame that most menus relegate Stilton to the cheese board, where it’s hard to find new flavours with only biscuits and crackers at your disposal.
Fortunately, the Hilton meets Stilton menu offers something of interest at every turn and, with alternative Stilton dishes available for each course, it comes as no surprise that we’re already planning another visit before the collaboration comes to an end.
